The only change I make to the Geek Feta Dip is to add a couple of pinches of dry dill. I also dice red peppers and green seedless cucumbers to layer on top. Serve with oven toasted (if possible warm) pita pockets that are cut into triangles.

Blue-Green Gauc
1 Tomato; chopped
1 Spring onion; finely chopped
1 ts Garlic puree or 1 fat clove
1/4 ts Ground cumin; up to 1/2, up
1/2 ts Ground coriander
1/2 ts Sea salt; up to 1, up to
1 Lime; juice of
1 Ripe avocado
1/4 c. sour cream
1/4 c. gorgonzola cheese, crumbled (or regular blue if you like it better)
Instructions
Mix all the ingredients, except the avocado, together in a bowl and set aside until ready to serve. Halve the avocado, remove the stone and scoop out the flesh into a shallow bowl. Mash with a fork then mix into the other ingredients. Great with tortilla chips or veggie sticks to dip and dunk.

Black Bean, Avocado and Corn Salsa
serves
4 - 8
ingredients
1/4 cup vinaigrette salad dressing

1 cup corn kernels
1/2 cup diced red pepper
1 fully ripened Avocado from Mexico, halved, pitted, peeled and diced

Ingredients

o TIP: To determine if an avocado is ripe, give it a little squeeze. If it is soft it is ripe. If it is hard put it back. Stay away from avocados that are too soft as they may already have roots sprouting inside them.
* 1/4 onion
* 1/3 bunch cilantro
* 1 roma tomato
* 1 jalapeno pepper
* 1 tsp salt
* 1 lime
Directions
1. Cut the avocados lengthwise in half around the seed. Scoop out and throw away the seed and use a spoon to scoop the avocado into a bowl.
2. Finely chop the 1/4 onion, cilantro and jalapeno pepper and add to the bowl.
* TIP: It you don’t want it that spicy, cut it in half lengthwise and remove the seeds in the jalapeno pepper first
3. Dice the tomato and add to the bowl.
4. Mix everything together, sprinkling in the salt halfway.
5. Squeeze on some lime juice to prevent oxidization and browning.

This one is really good. People were a little hesitant to try it the first time I served it, but now people ask ahead if I'm bringing it: Blue-Green Gauc

I tried this one at a party last month, and I had to get the recipe (they said to go to the "avacado website". It lasted about 30 minutes and the party was officially over when the dip was gone! Black Bean, Avocado and Corn Salsa

Everyone's recipes sound fabulous, but I just wanted to add mine, because of the simplicity. I learned how to make this at a Mexican restaurant that I used to work at, so unfortunately I am not able to provide measurements; everything is "seasoned to taste." Ripe avocados (mash them w/ fork or potato-masher - leave 'em chunky!)
Diced tomatoes
Chopped onion
Cilantro
Lime Juice
Salt & Pepper

This is so simple, a caveman could do it. Plus it tastes awesome, can't really mess it up. Ingredients
