ARROZ CON GANDULES
3 cups rice
4 cups beer or stock
1 can gandules goya
1 big piece chicharron (cooked)
salt and pepper to taste
3 tablespoons sofrito goya
1 tablespoon chopped garlic
1 packet sazon goya con achiote
1 tablespoon capers (alcaparrados)
1/2 can tomato sauce
In a pot, add olive oil; heat and crisp up chicharron then remove.
Add garlic and sauté for 20 seconds.
Return chicharron to pot and add sofrito, seasonings, capers and tomato sauce with 4 cups of beer; and simmer for 3 minutes.
Add gandules and simmer another 10 minutes. Stir in rice. When it dries, mix from bottom to top then cover.
Let cook 35 minutes.
ANOTHER ONE IS
ARROZ CON GANDULES
1 sm. onion
3 pieces of garlic
1 sm. green pepper
1 can of coconut cream
2 cans of Goya beans
4 c. rice
Salt to taste
Pinch of black pepper
Fry onions, garlic and green peppers in a little oil, when onion is transparent, add coconut cream and 2 cans of beans, salt and pepper to taste. Bring to a boil and add 4 cups of rice and some water if needed to cover rice. Wait for water to drain down and cook to simmer, turning rice until finished.
Really it does not matter what kind of bean you use, as long as it is something you will like, but typically pigeon peas are used. Honestly, I like to make my own things, so I will actually like it. Just try and see how it turns out. Good luck :)

Can you make Arroz con Guandules, without pigeon peas?
What would happen if I used red beans? or pink beans?

If you use beans then the dish would be called Arroz con Habichuela or rice and beans. They are both legumes but they are different. Pidgeon peas are picked from trees. Beans grow up from the ground.
