Trisha's Vodka Sauce
Great recipe for a crowd - This recipe serves up to 8, but it can be doubled (or even tripled) easily. To feed 2-4 people, cut the recipe in half and refrigerate leftovers (if any). Penne with vodka sauce tastes great up to a week later!
Ingredients:
1 sweet onion, chopped
4 Tablespoons butter
1 cup vodka
2 28 oz. cans crushed or puree tomatoes
1 pint heavy cream
crushed black and red pepper to taste
2 lb. penne pasta
Directions:
1. Melt butter in saucepot.
2. Saute onion in butter until translucent.
3. Add Vodka and simmer over medium heat 10 minutes.
4. Add both cans of tomatoes and simmer 20 minutes more.
5. Add heavy cream and pepper to taste. Simmer 20 minutes more.
6. While sauce is simmering (step 5), cook penne pasta in boiling water according to package directions.
7. Add vodka sauce to cooked pasta and serve.
