Just use the "Consolidate Library" option in iTunes, then copy over your iTunes music folder in its entirety and you'll be fine.
(Copy the "\????\Music\iTunes" folder on your 7 installation to the "\Documents and Settings\????\My Documents\My Music\iTunes" folder on your XP installation, where ???? is your username.)
Alternatively, you can just use the "Back Up Library" option in iTunes on 7 to burn your entire library - including info etc. - to blank CDs or DVDs. This kills two birds in one stone - not only are you backing up your music, but you can also just pop one of those discs into your XP installation, open iTunes, and it'll do everything for you.
