Picasa should be coming to the mac from what I hear.
I use iphoto because I like its integration with the rest of the system. It is also reasonably fast on my aging computer. I have also used iphoto to buy one of the printed books and was very happy with the results.

On Windows, before I switched I used to use Google's Picasa which is pretty, easy to use and integrates well with the online Picasa service as well.
As for pay products, I don't have any experience with them. But I hear the software that comes with Abode Premier Elements is good: http://www.amazon.com/Adobe-65026616-Photoshop-Elements-7/dp/B001DMBWXS/?ie=UTF8&tag=wwwokaythings-20
Lightroom is also supposed to be very good: http://www.amazon.com/Adobe-65007312-Photoshop-Lightroom-2/dp/B0018VH8S2?ie=UTF8&tag=wwwokaythings-20

I'm on a Mac, so I suggest either iPhoto because Mac is sort of a synonym for media editing. However, I have heard wonderful things about Picasa. I found a great article from the New York Times thoroughly comparing both. Check it out, good luck, and Merry Christmas Eve! http://www.nytimes.com/2005/01/20/technology/circuits/20stat.html?_r=1

On Mac, I see nothing wrong with iPhoto. I have about 5 or 6GB of photos and effortlessly keep them organized with this application. On Windows, before I switched I used to use Google's Picasa which is pretty, easy to use and integrates well with the online Picasa service as well.
