It should work since it's unlocked version, you just need to get the SIM from any carrier. I would still check with the local carrier. The phone looks good with all those features, I need to check if it is available here.
In the US, I have swapped Pay As You Go SIM cards over a few GSM phones (ATT and TM) and used without any issues. My niece gifted me a Sony erricson phone bought in UK and was able it use it here with PAYG SIM card from ATT and TM. no issues.
But my question, why you would do that since it's going to cost more to use all those features on PAYG. This is what I found on vodaphone site for PAYG SIM card only option.
"you can visit the Vodafone live! home page and My Account for free. Up to £1 for 15MB in a day. £2 for every additional MB. More Info
+ up to £1 for 15MB in a day. £2 for every additional MB. More Info"
I found that the £30 plan seems to include unlimited internet/txts with 600 minutes.

If I do purchase it as a SIM Free phone and I buy a SIM from O2 or Vodafone, will the phone still work, internet work etc for PAYG?

Yes, PAYG does not make sense for heavy users unless for some reason you are unable to get a Pay Monhtly deal.
