I can't say for sure that it's the biggest, but the first person that comes to mind is Jay Leno. He's been married forever and has no children, so he just puts all his millions into car collecting:

I second this answer. It most probably is Leno.
After further research, I found this guy: Harold E. LeMay. Turns out he was a garbageman that went on to own his own garbage collecting company and amassed an enormous fortune. At one point, he had over 3,000 automobiles, motorcycles, trucks, other vehicles and related memorabilia.
"The LeMay Collection was listed in the Guinness Book of World Records in 1996 as the largest privately owned car collection in the world."
Problem is he died in 2000 so his collection is slowly being donated to the LeMay Museum. So not only is he not a celebrity, he isn't even alive, but I figured he deserved an honorable mention none-the-less.
