That's one big cat!
Siamese are known for being temperamental and they are also known for wanting to be the boss. It takes them a bit longer to realize they aren't the boss, compared to some cats ( which is why he settles down when there's another male in the room, even human male, he sees him as the leader of the group ). So a little extra discipline, even a growl from you when he gets pissy to show him who's the boss will help.
Now, why does he hit out every now and then - probably just being uncomfortable. He isn't old enough to start getting angry because of that, like old cats do sometimes. But its probably for the same reason, he's sore or uncomfortable or aching somewhere. Just let him alone, a bit of discipline for being scratchy and maybe a quick check up at the vets on a regular basis because of his size.
Hope this helps, I have had many Siamese cats and old cats in the family, they each have very different personalities and problems :)

My huge Siamese son...
I have a 38 pound seal point siamese...I love him to death I have had him for 7 years and he is like a son to me. Cuddles and has to always be right at my side. However I have always wondered why he is so tempermental. We have another siamese but she is schiezo and is friends with everyone. Yet Simon (my cat) gets randomly pissy for no reason he will be lying there and then just swat you out of the blue...any ideas?

Thanks. I know I waited too long >.< but having been in school when I got him...it was hard to take care of him...He does his best when a man is in the room...then it becomes time for some serious bonding :)
