Definition will average the colors and "define" the selection / image.
Edge Sharpening will only define the edges. Edges are usually calculated as wide differences in contrast.

In Aperture 2, what is the best way to balance "Definition" and "Edge Sharpening?"
I haven't found a good description of the difference between "definition" and "edge sharpening" — both seem to change local contrast. I usually use a combination of mid to high settings for both. Is there a guideline for the best way to use definition and edge sharpening together?
