If you have a Mac, the best program I've seen for this purpose is iStopMotion. Basically you plug your camera into your computer and it gives you all of the tools that make it easy to do stop motion animation, time lapse and even fun stuff like the ability to print out flipbooks.

Awesome... That looks pretty much like what I'm looking for, and not too pricey, either.
