For your purposes it shouldn't make too much of a difference. The Mac mini might be considered underpowered compared to the rest of Apple's lineup, but that doesn't mean it is a slouch. It easily outperforms even the highest end Mac from just a few years ago.
That being said, more RAM will help compensate for slower processors, a slower bus, and slower HD in your perception of its everyday speed. If you feel comfortable doing so I would buy the RAM separately (from crucial or newegg) and install it yourself. The OS is far more responsive with more RAM and with a 5400rpm hard drive the extra RAM is worth it in my opinion.
Coding itself is not very intensive, but coders like to switch back and forth between apps often and that is where having more RAM will really help you out.

You can always upgrade your RAM later if you decide to use the machine as a normal desktop and run intensive applications (Photoshop), watch videos, etc.

How much does memory matter in Mac Mini?
I am thinking about getting just a Mac Mini to play with IPhone SDK. I know the Mac Mini is very under powered, but since I will just use it for coding, don't really care too much about performance. That being said, will it make much of a different to get one with 1G of Ram or 2G of Ram?

If you're just going to be coding, 1GB should be more than ample ... many very old machines (with far less than a gig of RAM) make adequate development environments. Are you going to be running Linux?You can always upgrade your RAM later if you decide to use the machine as a normal desktop and run intensive applications (Photoshop), watch videos, etc.

1 Gig of ram should be fine just for coding. If you really want more ram you can upgrade it on your own if you know how. The box is sealed, but it's possible to open and Apple way over prices RAM. It's a rule of thumb to go with the lowest possible RAM for macbooks because of how easy it is to replace and how cheap you can get it for from 3rd parties.
