My family loves my cheesy pancakes.

My basic pancake recipe

1 cup self rising flour
1 egg
1cup milk

I never buy the mix, this recipe makes great pancakes. Variations that I have used successfully are:

-adding a little vanilla mix
-grated cheese (my kids love this one)
-sausage
-grated apples
-banana
-crumbled bacon.

The sky is the limit on this. you may be able to add something that I haven't thought of yet. I am like you though, I don't like too much sweet in my pancakes. I don't even eat them with syrup only butter.

My favorite is cranberry pancakes:

1 cup chopped cranberries
2 cups vanilla yogurt
1 cup yellow corn meal
1/2 cup all-purpose flour
1/4 cup maple syrup
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Butter and maple syrup for accompaniment
Soak cranberries in the maple syrup overnight.
Mix yogurt, corn meal, flour, baking soda, baking powder and salt. Add cranberry mixture and stir.
Heat a lightly greased griddle or skillet over medium heat (375*F - 190*C). Griddle is ready when a few drops of water bubble and skitter rapidly around.
For each pancake, pour scant 1/4 cup batter onto hot griddle. Cook pancakes until surface is covered with bubbles and appear dry around the edges. Turn and cook other side until golden brown.
Makes about 15 to 18 (4-inch) pancakes.

Well, I'd like to say that's how I make them but truth be told I'm not much of a cook. I just throw some cranberries in the "just add water" pancake mix ;-)

You can make pancakes the easy way now with Batter Blaster. You don't have to worry about mixing anything, if you get this. Then just add a little butter and syrup, or any sort of topping that you prefer. I like to add Aunt Jemima light syrup with a little bit of cut strawberries, bananas, and then top it off with some whipped cream.

My favorite pancakes are bacon pancakes.
Fry 3 thin slices of bacon in the frying pan and when the bacon starts to shrink do the pancake batter in the pan fry until ready.
serve with brown sugar.

I love idea of the bacon, Im a savory girl myself, not too much into sweet stuff, but you just knocked me over when you said to "serve with brown sugar" I suppose its a European thing, we just dont put sweet stuff on bacon. LOL Id probably substitute that with "Daddies Brown Sauce"

Our family loves pancakes, whether they are home made or a mix that is doctored up. Each of us has a favorite additive, so when I make pancakes it is an event.
We have peanut butter and chocolate chip pancakes, blackberry pancakes, and cinnamon vanilla pancakes, then the best pancakes ever are banana nut pancakes. It is easy to do different pancakes because I always add vanilla to the batter, then as I ladle them on the griddle I add what each person likes and cook them up.

One day I was throwing together my usual recipe for pancakes:
2 cups Flour
2 Tbls. Sugar
1 tsp. Salt
4 tsp. Baking Powder
1/4 cup Oil
2 Eggs
1 3/4 cups Milk (or 2 cups Buttermilk)

but I did not have quite enough flour so I threw in some cornmeal with the flour (about 1 1/4 cups flour and 3/4 cup cornmeal) they turned out so good, my kids loved them.

This is one of our family favorites:

Banana Granola Pancakes

1 1/2 cups whole wheat flour
1 tablespoon sugar
1 teaspoon baking soda
1 3/4 cups nonfat buttermilk
2 egg whites, lightly beaten
2 cups sliced bananas (about 2 medium size)
1/2 cup nonfat or lowfat granola cereal

1. Combine flour, sugar, and baking soda in a medium sized bowl. Stir to mix well. Stir in buttermilk & egg whites. Fold in bananas and granola.
2. Coat griddle or skillet with nonstick cooking spray & preheat over medium heat.
3. Pour 1/4 cup of batter onto hot skillet. Cook until the tops are bubbly and the edges are dry. Turn and cook second side til golden brown.

*This can also be prepared using thin sliced apples in place of bananas.

I do an extremely thin version of pancakes...everybody loves them, water down the batter using milk or soy milk if you want it more healthy, the cosistency needs to be able to spread across the whole pan without getting thick. pour this very liquid batter into a very hot skillet that has been sprayed with a little oil, they cook very quickly flip and stack. start stacking them up on a plate, I put out another plate with all different types of fruit and jams, everyone can help themselves to whatever they want, you roll them up like little burritos and enjoy, sort of like crepes. I have done a savory version of this for dinner as well with grilled veggies. Lots of fun and lots of yum!

I'm obsessed with pumpkin pancakes! They have really yummy ones at restaurants, but I found a recipe online that's delicious (and much more affordable):

2 cups flour
3 tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp ground allspice
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp salt
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 tbsp vegetable oil
2 tbsp vinegar

Mix together wet ingredients, then mix the dry ingredients in. Use about 1/4 cup of batter per pancake. Brown both sides on a griddle, add some pecans and maple syrup, and enjoy!!

As a kid I loved to go to my cousin's Finish grandmother's house for breakfast. We would have silver dollar pancakes. I loved those sweet, little crispy pancakes.

As an adult, my tastes have gone in a different direction. For several years I prepared an Oatmeal pancake recipe from Jane Brody's Good Food cook book. The recipe was very hearty and include mashed bananas, apples and ingredients I can't even remember.

More recently I have fallen in love with a store bought mix that I doctor up. The mix is Kodiak Cakes. I always add some type of fruit, usually frozen blueberries. I have also tried preparing with seltzer water, ricotta cheese and cottage cheese to enhance the texture. I love the simplicity of just needing to add water to the mix and being able to use as little as 1/2 cup of mix to make one single pancake.

In all cases, I use a bit of real butter, well actually butter whipped with canola oil, and real maple syrup.

For the Dosa (pancakes)

Dosa batter (available at any large supermarket)
Flat non-stick frying pan

Masala Preparation
----------------------------
For the Masala or the stuffing, take the potatoes and put them in a pressure cooker to boil them. Once they are boiled cool them with cold water and then peel them of. Now take the onions and chop them into thin pieces. Chop the green chillies too.

After this pour some oil in a Pan, add the cumin seeds, salt, and the onions into the oil. Fry them till the onions are red. While the onions are getting fried, mesh the potatoes. Once the onions are fried, mix the meshed potatoes. Mix this mixture for a few minutes. Now its ready to be stuffed into the Dosas.

Ingredients for Chicken Dosa

For the chicken filling

500 gms boness chicken cut into small cubes
2 tablespoons of curd
1 teaspoon of turmeric
1/2 tea spoon of red chilli powder
2 teaspoon of ginger-garlic paste
1 teaspoon of Garam masala
1 teaspoon salt
1 large onion
1 large green chilli
3 tablespoons of vegetable oil
2 teaspoon of tamarind (soaked in a cup of water for 2 hours)
12 curry leaves

Preparation for Chicken filling for Dosa
--------------------------------------------------
1.Clean and cut the boneless chicken
2.Mix curd and salt and leave to marinate for an hour at least.
3.Take the chilli and the onions and grind to a paste in a blender
4.Heat the oil in a thick bottomed pan
5.Add the onion paste and fry till golden
6.Add the red chilli powder, turmeric and the garam masala and stir for a minute
7.Reduce heat, add the ginger-garlic paste, stir and cover the pan for 15 minutes till the oil starts floating
8.Add the chicken, increase heat and stir well till the chicken is browned on all sides
9.Cover and let it simmer on low heat for 15 minutes
10.Add the curd and the strained tamarind water and bring to the boil
11.Add the curry leaves (alternatively, you can add the curry leaves and mustard seeds to hot oil in a separate vessel and then add it to the main dish
12.Simmer gently, till the gravy is reduced to a thick consistency

Nothing fancy, I like either chocolate chips, or adding cocoa powder (just a pinch or two), cinnamon, and some whole grain pastry flour to mixes. I'm a sweet junkie, I admit it on the chips. Adding just a bit of the powder and cinnamon doesn't make it sweet so much as a bit richer, and a little whole grain flour makes them feel more filling. Pastry flour is lighter, so it doesn't weigh them down as much as regular whole grain flour does.

An easy way to make your pancakes more healthy and tasty is to add both banana's and walnuts! In other words, a banana nut pancake!

Simply cut 1 banana into thin slices and crush some walnuts. Add both to your pancake batter and then cook as you normally would. This yummy treat doesn't require syrup, but you can add it if you like! Delicious!
