Well, we all know that the book is ALWAYS better than the movie. Look at Peter Benchley's Jaws - the ending is totally different than the movie!

But in this case, I believe the problem lies in the fact that there are so many smaller details that add up to big issues in the books that aren't mentioned or are completely different or screwed up by the movies. You get a glimpse into each character's mind and their motives when you read the books and that information simply can't translate to film.

I still think the movies are fun and I will see them all, but my wife shares your view - it almost makes her mad!!
