There is no single answer to your question. People are both complex and different. Taking materialistic desires (which is what I think you are asking about)...One reason that a person might never be satisfied with what they have is if they define their self through the objects that they own. For example, some people might think that if they have a more expensive car or a more expensive house than another person, then it shows (to both them self and the other person) that they are better than that other person (worked harder, is smarter...and so forth). Other people may always want more materialistically, but for different reasons. They judge their own success based on material items....objects, and money specifically, give a concrete gauge (something tangible that can be 'seen'). I may see my own success in terms of what I have financially achieved. Other people may just want to accumulate as much as they can to try and ensure the success of their offspring. And some people are never satisfied because they couldn't imagine being satisfied...they might ask..what would I do with my time if I didn't devote it to trying to get more.
Perhaps a deeper reason (and I say perhaps because its always speculation when we talk about this kind of stuff) is that, given that there is a limited amount of resources (only so much food to go around, only so much water to go around) that there is something built into us from our more primitive days that manifests as a desire to always seek more. Back in the 'old' days of caveman living, people stored up as much food as they could get their hands on, because you never know if you will find more when you run out. Now, even though many of us are not really worried about running out of food (in the sense that they were)...that mentality still exists deep in our brains, and we manifest it through houses, cars, and that kind of stuff.
Another perhaps 'deep' reason is that, just like peacock feathers, having more might act as a mechanism to make one more attractive as a reproductive partner. This still manifests pretty clearly today, but still in a somewhat different way from our 'cave' days.
That doesn't exhaust the possible reasons that people are never satisfied, but it's a few reasons. In short, human psychology and human desire is complex...and you really have to look at it on a case by case basis.

Of course we can want too much. As I have told my children all their lives "what you want and what you get are 2 different things"

Without the desire for more - more food, more love, more warmth, more time, more knowledge - we would not have survived this long and we definitley would not have prospered. It is that desire for more that is ingrained in our DNA that makes us human and that keeps progress moving forward.
However, I also feel that societal pressures influence how much we want and tell us not to be satisfied even when we do have enough. Along with that, it seems to me, that many people in our society feel that not only do they need more but that they deserve it - deserve it to the degree that they are owed something without putting the work in to get it. In these pressures to attain more, you don't see as much progress and benefit for humankind as a whole. These kinds of pressures to want more than we need and/or deserve result in crime, violence and a disregard for those around us.

We are given by God the the freedom to choose. To do whatever we want to do and accomplish things. And we also have the wisdom to know what will make us happy or not. So it is up to us to choose wisely. Maybe experience will teach us what makes us happy and that will serve as a guide how to live a happy and meaningful life. To know what our purpose in life.
For no matter what we do once we have all the fame, wealth, and power, we can still feel empty deep inside for we tried to satisfy our earthly body while our soul famished.

For that matter books wouldn't be read, there would be no news reports because nothing would change or advance at all, people who research disease cures wouldn't do that anymore so people would just die.
Complacency and satisfaction with just what we have could be the end of the world.

Why do we have the need to want? why cant we just be satisfied with what we have?

That is very simple. If we were to only be satisfied with what we had, then we wouldn't be driven. As humans, we are naturally driven. Without want, we would have nothing to strive for. Nothing to make us better or any reason to improve ourselves. Of course we can want too much. As I have told my children all their lives "what you want and what you get are 2 different things"

That is human nature, the same as our survival instinct we are not meant to be satisfied for we are not meant for this world. Our life on earth is only temporary. We are just passers by so everything we always wanted to have or get will lose meaning in a span of time. But we can ask God for the grace of contentment. If everyone was satisfied with what they had, there would be no advancement, no discoveries or inventions. There would be no amazing successes and no devastating failure, and while that may sound peaceful it would also be quite boring and your life would also not have any goal to it. Relationships wouldn't turn into marriages, homes wouldn't get improved, children wouldn't get more education. For that matter books wouldn't be read, there would be no news reports because nothing would change or advance at all, people who research disease cures wouldn't do that anymore so people would just die.
Complacency and satisfaction with just what we have could be the end of the world.
