There a number of good Cognacs, each with a different characteristic taste. After experimenting with the younger versions (VS, VSOP) and finding one you like you can then try the older varieties. Most people that enjoy Cognac find that the more aged the more complex, smooth and interesting the taste. The cost goes up as the Cognac gets older. Several popular brands to consider are Courvoisier, Hennessy, Hine and Remy Martin.

If you haven't tasted cognac before, I'd suggest trying different ways, chilled, mixed, neat, warm, room temp. It is meant to be sipped at room temperature in a large round-bottomed glass (snifter), however any large water glass with a stem will do fine.
