Buy Cognac.
Pour a reasonable amount into a snifter/ballon glass.
Lift the glass so the ballon is resting in your palm. This will warm the Cognac and give it greater aroma.
Admire the colour and smell. Swill it about and look at how it falls down the side of the glass (legs).
When smelling go for short sharp sniffs. This will give you maximum smell and let you pick out the flavours. When doing this try to describe what you smell without using the words "alcohol", "cognac", "brandy", "grapes" etc... Things like "bananas" are more descriptive.
Sip the cognac once you have smelt it. You dont need much just enough to wet your lips and tongue. Move it around in your mouth then breath in over the cognac to get full flavours. Repeat.
I find it goes very well with chocolate. Lindt works well, but go for your favorite one that dosnt have nuts or buiscit inside it. If you can get 99% Lindt it is perfect! Let the chocolate melt on your tongue and then cut through it with the cognac.

I usually will have Cognac on a low ball glass. Since it's usually a drink I'll have when I'm relaxing, as a personal preference, I don't bother with ice and I don't mix it either. I don't care about warming it with the palm of my hand or any of that other nonsense that is supposed to be the "proper" way to drink it.

A lot of the point of drinking (good) Cognac is to enjoy the bouquet. It will help appreciate the taste and is an experience all to its own as well. To that end, the best way to enjoy it is to use a snifter with a small amount of Cognac in the bottom, and yes, wrap your hand around the bowl of the glass to help warm up the drink. That will increase the evaporation and the slightly warmed Cognac will expose more flavor when you drink it. Don't use ice, add water, put the glass over a flame, or even heat the glass with hot water before putting the Cognac in it. Do swirl the liquid and look at it in the light. Part of the overall experience is to appreciate the color and movement of the Cognac in the glass.

Use a snifter. The glass is designed to capture and deliver the aroma as it evaporates. Try warming the snifter with hot water for a couple of minutes. Pour out the water and dry the glass. Pour a couple of ounces of your favorite XO, sit back and enjoy.
