It really depends on the shape.
If it has a nice circular shape and you have enough patience and tools... I'd go for the Death Star design!

If it's more square in shape, you might want to do a Great White Shark!

If the shape is short and squat, you can do anything from the traditional Jack-o-lantern face or try some fun new angles with incorporating the stem and using it as a nose!

If you have kids I loved the selection of patterns at Parents.com - they also have things to build like teddy bears out of pumpkins so if the carving doesn't work you can use the bits for something else.....there are 15 lovely little ideas here

What to carve in my pumpkin?
I just bought a 58 pound pumpkin! Any ideas on what to carve into it?

There are so many ways! I'm answering with a few links to free stencils and ideas for you - not sure if you prefer to carve out chunks or just do the stencil carving. If you google "pumpkin carving patterns" there are a couple sites that provide a print out diagram you can then overlay on the pumpkin for carving. This is one of the sites I found that is free
