Yes, Apple has a long list of restrictions, that all Apps have to take into account.
The most well-known restriction is the ban on anything remotely connected to nudity. Any nudity is prohibited, (except for Apple's paying partnet Playboy of course).
Also, there are restrictions to the platform and programming environements that can be used, and there is a ban on using anything Flash.
All restrictions are stated in the iOS Developer Agreement, which I have personally not beeen able to find, as that one is only accessible to Developers.
