1. Boil the spinach with water, salt, ginger and green chili for about 7-8 minutes.
2. Let it cool. When it cools down make the smooth puree in a blender and keep aside.
3. Heat oil in a pan. Add cumin seeds and let it crackle.
4. Add plain flour and roast it for few seconds.
5. Add bay leaves, red chili powder and cumin powder,
6. Now add spinach puree and cook for 2 minutes on medium heat.
7. Turn off the heat. Cover and let it stand for about 2 minutes.
8. Garnish it with bread croutons and serve hot.
