I understand what you want.
You didn't specify, so I'm gonna assume you on windows (as are about 93% of iPod users)
PodUtil -- its a freeware program that will allow you to pull off the MP3's from an iPod that is not registered to the computer you are on.
Ex: you could come over to my house, and normally if you connected your iPod to my computer iTunes would say it wasn't registered to me and would want to wipe your iPod clean and reregister it, with PodUtil, I could access all of the contents of your iPod and copy it to my computer.

That file gets modified every time you add music to your library. You can even delete the file and when you re-add your music the file I mentionned above will get re-created.
If you are on a PC, you could also do a dir /s > output.music.list.txt from wherever your MP3s are. That will also give you a listing of all your music, it will be in a text file format. Give it a try and see if it fits your needs.

It's simple - last winamp do it (plugin pmp-ipod.dll). Just try it, it's not so hard.
Warning! I have Classic and sometimes after riping my DB on iPod start missing arts. Simple solution - before rip, backup you DB from iPod and after put it back. This process take seconds and keep you away from problems.

Just an FYI: Senuti will pull the files out, but their names won't be properly identified. They do, however, contain accurate ID3 tags, so iTunes will be able to rename them properly from that.

Easier way: let iTunes rename it from the ID3 data embedded in the files.

YamiPod is another good one, and the cool thing is that it can be run from the iPod itself, as long as you have "disk use" enabled or any other flash drive.
