I've come across a couple of lists that outline Snow Leopard compatibility across many popular Mac applications. Unfortunately, they aren't that well organized, or they're currently offline.
WikiDot - Snow Leopard (currently down, may become available again soon. I think they were having some hosting issues earlier that they're still recovering from)
MacRumors - Snow Leopard Compatibility Thread (unorganized -- you can search this one thread by clicking on "search this thread" below the pagination links)
I'm sorry to say that these sources aren't the greatest at the moment … but they're better than nothing. :-)

Most, if not all of your applications will work in the 32 bit Kernel of OS X Snow Leopard. The only time you will find compatibility issues are when you boot into the 64 bit kernel. The boot process for 64 bit is (the 2 finger salute), holding down the 6 and 4 keys at boot up. As long as you maintain a default 32 bit kernel, 90%+ of your applications will work.
There is also a Wiki about the compatibility which lists almost every application found out there today.

OSX Snow Leopard comes out August 28th. If I upgrade, which of my current applications are going to stop working?
I use 1Password and learned about the release date for Snow Leopard from a message they sent me saying I will need their new version 3 if I want to upgrade.
I haven't seen a comprehensive list of what will and will not work with Snow Leopard. Anyone come across such a list?
Or if you know of individual applications that will not work anymore, please let me know.

Unfortunately in this case, I know it does (because I learned about it from one of my applications warning me I would need to update).

Brian - don't let us hang here. Which app is it that "warned" you? How did it find out about your plans causing it to trigger the warning? ;-)

Hi. The app was 1Password (It's in my description above)
1Password has direct communication with the Apple Keychain, so I wasn't too surprised that it would require an update.
It looks like most of the effected apps have some component in direct communication with the OS.
