Although a lot of background was added to the universe in subsequent movies and books, the prime source for anyone wanting to celebrate a Star Wars day would have to be the first movie, and thus the Mos Eisley Cantina. The drinks were visible but not named.
In my opinion, the most suitable drink to commemorate the cantina on that desert planet would be a frozen margarita because of its bright green color and desert associations. Serve them in some unusual tall glasses.
