Without a doubt, the...
Albuquerque International Sunport
I've never seen such a clean, well crafted airport. It's got so much of it's New Mexican culture (Native American roots) embedded in it. A few years ago it was undone, and boy does it show. I live in LA, so when I visited New Mexico I was pleasantly surprised with this beautiful airport!
There are a variety of restaurants that cater to every taste: from the typical fast food restaurants (of course), to the distinctive New Mexican foods, to nice sports bars, and other traditional restaurants. Although there are plenty of people at this airport, it always seems tranquil and quiet.
I wouldn't mind being stuck at the Albuquerque International Sunport one afternoon.
I hope this helps :)

When I got stuck at DFW roughly twelve months ago due to snow, the best place to sleep was the D concourse. The carpet was better than the cots that were passed out. In contrast, HNL does not have such a space in case of a similar sort of event.

The actual system runs really well too, but I'm guessing that doesn't really matter if you're stuck there. The chairs are pretty comfortable for a nap though.

Worst is a tie:
Miami's international terminal - reminded me of crossing the border at Tijuana in the 1970's. Grubby with grouchy authorities everywhere.
Phoenix. Land there because you're going somewhere else. Stay for the food poisoning!

As strange as it sounds LAX is the best terminal I have ever been in and out of, could have been the SWA staff looked after their employees wanting to fly for free, which is a good thing being treated well for a company you work for but being a staffer behind the scenes.
However, MDW in Chicago is a NIGHTMARE, and SEA in Seattle is a huge pain in the ass. Never traveled much to the East Coast, but INIT Gattwick is a much better terminal than Heathrow for London/Paris based destinations. It truly depends on the carrier you are with, though I dont work with Southwest Airlines anymore, they are good unless your are in thier zone of rotten employees, ElPaso, SanDiego, Seattle, Chicago, InD, Baltimore, Amarillo, Austin, etc. However the LAX branch of SWA was the best, and Always chose British airways, tell them you work in the business and the tc agent will upgrade you for free. That is if you are sincere

For late night flights across the Pacific - San Francisco International. They have good restaurants to grab dinner before.
After a red eye from the west coast the east - Atlanta. It has terminal trains.

the only thing not likable about it is the fact that is nearly impossible to get out of the restricted area since it became a special administrative region...

I would have to say the Dallas / Fort Worth Airport. Its huge! I especially loved the shuttle that goes around the top of the airport... Its fun and a great way to kill time! Its really a mall on the inside, all kinds of shops, and restaurants... really cool...

Dalls-Fort Worth is more hospitable than Denver if you get stuck overnight. Honolulu really is not a fun one to be stuck at especially if power fails. McCarran International Airport here in Las Vegas is a nice place but things are shut down overnight. When I got stuck at DFW roughly twelve months ago due to snow, the best place to sleep was the D concourse. The carpet was better than the cots that were passed out. In contrast, HNL does not have such a space in case of a similar sort of event.

Yeah being from DFW I am biased but I agree, that whole terminal station and coordination is the best I have ever seen. Back around 15 years ago I worked with the Doubletree Hotel in Irving,Tx. That hub was so easy to get around and so many people were pleasant and shocked how well that airport did business. IMHO that terminal is better than SWA in LOVE Field because Dallas TC/Agents are very cranky. Dallas, LA, and SFO are the best in the US to take care of their people

The Hong Kong International Airport has been voted the best in the world for 7 years running, it's basically like a airport theme park in there. There is a 360 seat cinema, an aerospace museum with interactive flight simulators, excellent food available, and everything is very well maintained and clean. The actual system runs really well too, but I'm guessing that doesn't really matter if you're stuck there. The chairs are pretty comfortable for a nap though.

The one I enjoyed most was Heathrow, mainly because I enjoyed the shops. And probably because I was a little reluctant to end my vacation, too. Worst is a tie:

Phoenix. Land there because you're going somewhere else. Stay for the food poisoning!

Well I used to be in IT at Southwest Airlines that gave us the privilege to fly all around the country for free and you could make deals with big hubs for international flight round trips and upgrades for as little as 50 for airline employees. As strange as it sounds LAX is the best terminal I have ever been in and out of, could have been the SWA staff looked after their employees wanting to fly for free, which is a good thing being treated well for a company you work for but being a staffer behind the scenes.

For shopping - London Heathrow. They also serve a great breakfast, and you can take a train into town to sightsee if it's a really long being stuck (mine was 12 hours last time.) For late night flights across the Pacific - San Francisco International. They have good restaurants to grab dinner before.
After a red eye from the west coast the east - Atlanta. It has terminal trains.

I would also opt for HKG as being stuck there is even enjoyable without any cash on you - there are ample internet workstations, very relaxing armchairs and recliners and if you don't like it in one part of the airport, take the skytrain to transport you to the gates. the only thing not likable about it is the fact that is nearly impossible to get out of the restricted area since it became a special administrative region...
