Aioli

Aioli is a garlicky mayonnaise from the region of Provence, France. Aioli is usually homemade or found in restaurants as a sauce or dip for seafood, vegetables or French fries.

Ingredients

The traditional way to make aioli is simply with garlic, mustard and olive oil. Some recipes include egg yolk as an emulsifying agent, while others replace the yolks with pre-made mayonnaise. The following ingredients appear in the most common recipes:
