Tuna Tartare

Tuna Tartare is finely diced raw tuna, typically made with eggs, dijon mustard, olive oil and lemon juice.

1. 1 egg yolk
2. 2 tablespoons Dijon mustard
3. 2 tablespoons olive oil
4. 1 small onion (minced)
5. 2 tablespoons dill (minced)
6. 3 tablespoons lemon juice
7. 1/4 teaspoon salt
8. 1/4 teaspoon fresh cracked pepper
9. 1 lb fresh sushi grade tuna (diced)

1. Mix together the egg yolk, mustard and olive oil until well blended.
2. Add the scallions, dill, lemon juice, salt and pepper.
3. Mix well.
4. Fold in tuna.

The FDA recommends that any fish that is going to be eaten raw should be frozen to below 31 degrees for 15 hours to eliminate the risk of parasites that may be present in the fish. And to avoid any further contamination, basic food safety practices such as proper storage, thawing and handling during preparation should be applied.
