Any taffy must use a process to make the product chewy. Most taffies made by individual vendors use corn syrup and butter, whereas prepackaged and mass-produced taffy uses chemical components and a speedy pulling process to stretch the candy over itself until the correct consistency is reached. 2. Saltwater taffy does not, to the surprise of many, contain saltwater.
3. The two initial companies, James Salt Water Taffy and Fralinger’s still make saltwater taffy, and recipes have only changed slightly since their inception.
