How to Make a Sweet Potato Pie
- Boil whole sweet potatoes in salted water in a large saucepan over medium heat. Cook for 45-50 minutes or until the sweet potatoes are tender when pierced with a fork.
- Remove the potatoes from the water, drain, rinse and remove skins by rubbing each potato between paper towels.
- Preheat oven to 350 degrees.
- Place the potatoes in a large mixing bowl. Add the butter and mix until smooth using an electric mixer.
- Mix in the brown sugar, sugar, milk, eggs, nutmeg, cinnamon, allspice and vanilla. Continue mixing until well combined.
- Pour the mixture evenly into the unbaked pie crust.
- Bake for 45-55 minutes or until lightly browned and an inserted knife comes out clean.
- Allow to cool completely, then cut into eight slices. Top with whipped cream or ice cream, if desired, serve and enjoy.
