Soba

Soba is a Japanese noodle dish made primarily from buckwheat flour. When served hot in broth, there are often other items in the soup. When served cold or hot without broth, it is usually piled on a plate or bamboo mat, and served with a dipping broth or sauce. In Japan, it is considered appropriate to slurp one's noodles.
