Shawarma

Shawarma is a Middle Eastern sandwich made with a barbecued meat, peppers, onions, pita bread and hummus or another tahini based sauce. Often lamb, goat, beef or chicken is used as the meat for the shawarma.

How to Make Shawarma

1. Cut a pound of beef, chicken or lamb into thin strips and marinate in a mixture of 1 tablespoon lemon juice, 2 tablespoons vinegar, 1 tsp of allspice, 1 tsp of nutmeg, 3 cloves of minced garlic and a pinch of salt and pepper. Allow to marinate in the refrigerator at least a couple of hours.
2. Prepare a tahini sauce by blending about a cup of tahini, 1/2 a cup of lemon juice, 1 garlic clove, some parsley and a pinch of salt. Add a little water to help the mixture blend well, but don't exceed more than a cup of water. Set aside.
3. Take out the meat and broil it in the oven or grill it. Serve into a warmed pita with the tahini sauce and a some chopped onions, tomatoes and peppers.
