Basic Chicken Scallopine

Ingredients

1. 4 tablespoons butter
2. 4 cups fresh mushroom, sliced
3. 6 boneless chicken breast, pounded flat
4. 1/3 cup green onion, sliced thinly
5. 1/3 cup water
6. 1/4 cup white wine
7. 1/2 teaspoon chicken bouillon mix
8. 1/3 cup whipping cream
9. salt
10. pepper

Directions

Before beginning make sure your chicken breasts are sliced thin. To insure the right texture pound them flat on a board. You may purchase already sliced chicken cutlets if you so desire. In a large skillet over medium heat, melt two tablespoons of butter. Add your mushrooms, cook until soft, and then remove from the pan. Add the remaining butter and and place your chicken slices in the pan and cook through. In a separate pan add your onions, water, wine and bouillon. Bring to a boil and stir, reducing heat.
