Pumpkin cupcakes are a holiday treat made with flour, sugar, eggs, fresh or canned pumpkin and spices such as cinnamon and nutmeg.

• 2 cups flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1 teaspoon salt
• 1 teaspoon cinnamon
• 1 teaspoon ginger
• 1/4 teaspoon nutmeg
• 1/4 teaspoon allspice
• 1 cup light-brown sugar, packed
• 1 cup white sugar
• 1 cup butter, melted
• 4 eggs, beaten
• 15 ounces pumpkin puree

1. Preheat oven to 350 degrees.
2. Line cupcake pans with paper liners to make a total of 18 cupcakes.
3. Mix flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg and allspice in a medium bowl.
4. Mix brown sugar, granulated sugar, butter and eggs in a large bowl.
5. Mix dry ingredients into the large bowl and whisk until smooth.
6. Add pumpkin puree and mix well.
7. Pour the batter into the paper liners in the cupcake pans, filling each liner half full.
8. Bake for 20-25 minutes or until a cupcake tester or toothpick inserted into the cupcake comes out clean.
9. Transfer to a cooling rack and allow to cool completely.
