Ingredients

• 1 cup sugar
• 1 tablespoon butter
• 1 beaten egg
• 1 teaspoon vanilla extract
• 1 cup pumpkin puree
• 1/2 cup chopped walnuts, optional
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt

How to Make Pumpkin Cookies

1. Preheat oven to 375 degrees.
2. In a large bowl, mix together the sugar and butter.
3. Mix in the egg, vanilla, pumpkin puree. Add walnuts, if desired.
4. Mix in the flour, baking powder and salt.
5. Drop teaspoon sized dough portions onto a greased cookie sheet.
6. Bake for 15 minutes.
7. Remove from oven and transfer cookies to a cooling rack.
8. Allow to completely cool and enjoy! Makes one dozen.
