Ptomaine Information
When proteins are decomposed by bacteria, ptomaines are formed, which are compounds that contain nitrogen.2 While foods that have gone bad often contain ptomaines, the body does not react negatively to the compounds. However, the body does react negatively to certain bacteria. Consequently, it is bacteria that can cause illness from food. Ptomaines are merely present in the contaminated foods, but are not what sickens individuals.
