Port Wine Sauce, as the name suggests, is a type of sauce made with Port, and also includes chicken or beef broth, and spices. This sauce is usually added last to a dish to top it off, rather than cooked with it.

Pairing

Port wine, named for its origin in Portugal, is among the sweetest and most full-bodied red wines. Though there are exceptions, port wine sauce is usually recommended for the same kinds of dishes that pair well with the wine: ones with enough heft to balance it out. These include hearty meats, such as steak and leg of lamb, certain cuts of pork, and heavier poultry, like duck. It typically is not prescribed for light seafood, such as shrimp and snapper. Because Port is sweet, it can also compliment desserts, particularly rich, creamy ones.
