Quick Rice Pilaf

Ingredients

1. 2 tablespoons of butter or olive oil
2. 1 cup long-grain white rice
3. 1 bay leaf
4. 1 teaspoon of fresh ground black pepper
5. 1 tablespoon of an herb and spice blend
6. 2 cubes of bouillon
7. 2 1/4 cups water
8. 6 skinless, boneless chicken breasts
9. 2 (16 ounce) packages chopped mixed vegetables
10. 2 teaspoons hot sauce

Directions

1. In a large skillet melt butter or heat olive oil over medium heat. Add rice and bay leaf. Stir until rice is translucent but not browned. Add pepper, herb-and-spice blend, bouillon and water. Mix well and bring to a boil.
2. Add chicken, submerging under water. Cover skillet and reduce heat to low. Let simmer for 20 minutes. Add the mixed vegetables and cook for another 10 minutes. Stir in the hot sauce. -adapted from AllRecipes.com¹
