Pickled Eggs

Pickled eggs are hard boiled eggs that have had the shells removed and place in a brine made of vinegar, sugar, salt, spices, and flavorful vegetables and herbs. Quail eggs are commonly used to make pickled eggs.

1. Prepare 6 hard boiled eggs and remove the shells from them.
2. Boil a brine of 1/2 a cup of water, 2 cups vinegar, 1 cup sugar, 1 tablespoon salt, 1 teaspoon cayenne pepper, 3 cloves of garlic and two onion thinly sliced into half rings.
3. Pour the brine and place the eggs into sterilized canning jars.
4. Keep refrigerated for a month to allow the eggs to pickle.
