Mashed Potatoes

Mashed potatoes are peeled or unpeeled potatoes that have been boiled until tender and then mashed. Butter. milk and seasonings are most commonly added, and served with gravy or topped with cheese.

French Variation

In the French variation egg yolk is added to the mashed potatoes, then piped through a pastry tube in a wavy ribbon design, brushed with butter and placed in the oven until browned. This dish is called Pommes duchesse.

Special Care

Always warm the milk before adding to the mashed potatoes. Adding cold milk will make the starch in the potatoes set, causing a tacky texture.
