Guide Note

The lemon is a round or oblong citrus fruit with yellow skin and a tart and acidic flavor. Lemons were introduced to Europe around 200 A.D. But were not extensively cultivated until the 15th Century. The juice and grated rind or lemon zest of a lemon, is used for baking and cooking and the high amount of citric acid with a pH level of 2 or 3, makes it a versatile fruit for both culinary and non-culinary uses.
