  • Crepes are thin, French pancakes. In the French province of Brittany, they are served with cider.1 While crepes may sound like an exotic treat, they're actually quite simple to make and you probably already have the ingredients you need in your pantry. Crepes can be a very light dessert when filled with fresh fruit, or a hearty meal with a melted cheese, ham and egg filling. You can buy a special crepe pan if you want, but the only equipment you really need is a skillet or good frying pan.

What You'll Need

  • Recipe makes about 4 crepes.

Ingredients

  • 1 cup flour
  • 2 eggs
  • 1 1/4 cups milk
  • 1 tablespoon sugar
  • 3 tablespoons butter, melted
  • Pinch of salt

  • Crepe pan or large frying pan
  • Spatula

Make the Crepes

  1. Whisk all ingredients together until smooth, with no lumps.
  2. Refrigerate the batter for at least one hour.
  3. Heat the pan and grease with cooking spray, oil, or butter.
  4. Pour enough batter in the pan to thinly cover its surface.
  5. Cook on one side until bubbles stop and edges dry.
  6. Flip and cook the other side until golden brown.

  • You can fill your crepes with almost anything you want. If you plan to use a somewhat runny filling, make sure there are no holes in the crepes.
  1. While the second side of the crepe is heating, sprinkle it with grated cheese and add a slice or two of ham.
  2. Cook an egg inside the crepe.
  3. Fill with a small amount of maple syrup, jam, chocolate sauce, caramel, or Nutella.
  4. Spread with applesauce for a healthy dessert.
  5. Slice up fresh strawberries or another fruit and mix them with sugar. Top the crepes with whipped cream.
  6. Wet the crepe with a small amount of rum, kirsch, Grand Marnier or another liqueur, then sprinkle with sugar.
