Understanding Cocoa
- Cocoa powder is made by pressing chocolate liquor until three-quarters of its cocoa butter has been removed and the remnants are processed.2 There are two types of unsweetened cocoa powder, Dutch-processed and natural. Although they are not the same, they can usually be substituted for each other in most recipes.3

Chocolate Cupcakes with Natural Cocoa
Ingredients
- 1 cup all-purpose flour

- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda (optional)6
- 1/8 teaspoon salt
- 1/8 teaspoon almond extract (optional)7
- 1 cup sugar
- 3 eggs

Preparations
- Preheat oven to 350 degrees F.6
- Line with paper liners or grease 12-cups of a standard muffin tin.8 7
Making the Batter
- In a medium bowl, sift together the flour, cocoa, baking powder, baking soda and salt and set aside.6
- In a medium to large mixing bowl, beat the butter and sugar together with an electric mixer until light and fluffy.7
- Add eggs one at a time, beating well with each addition.8 6
- Beat in vanilla and almond extract (if desired) and then reduce speed to low.7 8
- Add the flour mixture alternately with the milk or sour cream, just until blended.6 8 7 Start and end with the flour mixture.8
Baking and Finishing the Cupcakes
- Fill the muffin cups evenly about 3/4 full.6
- Bake for 17 to 25 minutes until a toothpick inserted into the cake comes out clean or the tops spring back when lightly pressed.8 7
- Cool cupcakes for five minutes in the pan then transfer to a wire rack to cool completely.8

- 1 teaspoon vanilla extract
- 1 large egg
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder (optional)10
- 1/2 cup boiling water
- 1/2 cup chocolate chips (optional)
- 1/4 cup unsalted butter

Preparations
- Preheat oven to 350 degrees F.10
- Grease and flour or line with paper liners 12 muffin cups.9 12
Making the Batter
- Mix, whisk, or sift together the flour, cocoa, baking soda, baking powder and salt in a large bowl.9 11 12
- Add the butter, milk, oil, sugar, egg, egg yolk and vanilla and beat until mixture is well combined (about 2 minutes on medium speed).11 10
- Add boiling water and beat to combine (about one minute).10 12 The batter will be thin.10
- Stir in chocolate chips.9
Baking and Finishing the Cupcakes
- Divide the batter evenly between 12 muffin cups until they are 1/2 full.11 12
- Bake cupcakes for 25 to 30 minutes until tops of cupcakes spring back when lightly touched or a tester comes out clean.9 10
- Cool cupcakes in the pan for 10 minutes before transferring to a wire rack to cool completely.10 9
