    • The secret to cutting perfect brownies every time is to use a plastic knife--just a regular old piece of plastic cutlery like you'd get when you order a take-out meal. Just cool the brownies in the pan as you normally would, then cut away. For some reason--and the physics escapes me--even dense, fudgy brownies do not stick to a plastic knife, so no worries about pulling up the top layer of your wonderful chocolate masterpiece or dragging ugly gashes through the pan as you try to cut even rows. Try it--you'll see!
