Deviled eggs are made by slicing a hard boiled egg in half and removing the yolk. The yolk is then mixed with condiments such as mayonnaise, mustard and relish and placed back in the egg white.

• 1 dozen hard boiled eggs (shelled)
• 2 teaspoons mustard
• 1/3 cup mayonnaise
• 1 tablespoon onion or shallot (minced)
• 1/4 teaspoon Tabasco Sauce
• Salt and black pepper to taste
• Dash of vinegar
• Paprika

1. Cut eggs in half lengthwise
2. Remove yolks
3. In a small mixing bowl add yolks and all ingredients except paprika
4. Stir until mixture is creamy
5. Spoon egg yolk mixture into the egg white halves
6. Top with a sprinkling of paprika
