Corn Fritters

Corn fritters are made by adding small amounts of a corn batter into a deep fryer or frying pan.

Ingredients

• 2 cups flour
• 1/4 cup sugar
• 1/2 teaspoon salt
• 1 tablespoon baking powder
• 2 eggs, beaten
• 1 cup milk
• 1/4 cup butter, melted
• 1 can whole kernel corn, or 1 1/2 cups frozen or fresh corn kernels
• Oil for frying

How to Make Corn Fritters

1. Heat oil in a deep fryer or frying pan over medium heat.
2. Sift the flour, sugar, salt and baking powder into a medium bowl.
3. Mix the eggs, milk and butter in a large bowl.
4. Add the dry ingredients to the egg and milk mixture 1/2 cup at a time while stirring.
5. Add the corn to the batter and mix well.
6. Gently drop the batter by tablespoon sized portions into the hot oil. Use caution when cooking with hot oil as adding the batter may cause splatters.
7. Cook each fritter for two minutes on each side or until they are golden brown.
8. Transfer to paper towels to cool.
9. Serve with syrup, powdered sugar or honey, if desired, and enjoy!
